Miss Kay's Biscuits
There’s something special about sitting around the kitchen table at Miss Kay’s house—especially when the aroma of her famous homemade biscuits fills the air. A true Southern classic, Miss Kay’s melt-in-your-mouth biscuits are more than just a breakfast staple—they're a family tradition. Fluffy on the inside, golden on the outside, and packed with buttery goodness, these biscuits are the kind that stop conversations mid-sentence and have you reaching for seconds (and thirds).
For Miss Kay, cooking is an act of love, and her biscuits are one of the many ways she brings people together. Her biscuits are always front and center for every Robertson family breakfast. Each batch is made from scratch using simple ingredients and a whole lot of heart—just like Miss Kay likes it.
Served warm with homemade Mayhaw Jelly, smothered in gravy, or enjoyed plain and piping hot, these biscuits are a taste of Southern comfort that speaks to the soul. It's no wonder they’ve become legendary in the Robertson household. Around here, when Miss Kay's baking biscuits, you know something good is coming.
Miss Kay's Melt-In-Your-Mouth Biscuits
Makes about 1 dozen (3-inch) biscuits.
You will need:
- Rolling Pin
- Pastry Blender, or dinner fork
- 1 cast iron skillet, baking sheet with 1/2" sides, or a 9"x13" casserole dish
- Large Bowl
Ingredients:
- 1 cup sour cream
- 1 partial can of Sprite or 7Up (about 1/2 cup)
- 2 tablespoons of butter
Directions
- Heat oven to 375ºF
- Save 1/4 cup of mix and set aside.
- Mix together the rest with sour cream and 7Up or Sprite with a fork or pasty blender until the dough forms into a ball.
- Sprinkle the remaining mix on a prepared surface and turn out the dough onto the mix. The dough will be wet, so pat more of the remaining biscuit mix as needed. Flour can be substituted if all mix has been used.
- With a rolling pin, roll the dough to 1/2 inch thick.
- Melt the butter in skillets or a baking pan.
- Using a round cookie cutter or cup, cut out the biscuits.
- Dip both sides of the biscuits in melted butter and place the biscuits in pan.
- Bake for 20 minutes, or until golden brown.
